I got a "bag of fish bits" from the fishmonger - just random scrag ends and off cuts - so cheap it was practically free that I am cooking with onion and leek, root vegetables, wine, and ... I've not decided what herbs or spices to add yet. And while I was preparing everything, a podcast episode about <a href="https://fosstodon.org/tags/tripe" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>tripe</span></a>. I remain unconvinced that tripe is fit for human consumption.</p>
